I always wondered what a cookie recipe without flour would taste like.
Since I can rarely go wrong with peanut butter, chocolate chips, and oatmeal in a cookie recipe, I am all over trying this cookie out.

I am hesitant to call this a "gluten-free" recipe because, from what I hear, oatmeal is a controversial ingredient in a "gluten-free" diet. Some folks say that oatmeal is "gluten-free" and other folks say that oatmeal is not "gluten-free".
I am not on a "gluten-free" diet and I am not an expert on a "gluten-free" diet. So, I will call this a "flourless" No Flour Added, Chocolate Chip Peanut butter and Oatmeal Cookies recipe.
Most cookie recipes have some kind of flour in the ingredient listing.

Flour is that grain that acts more or less like the base of the recipe. By saying "base" I mean that in a normal cookie recipe, we seem to start with the flour and then add everything else to it. Flour is usually the biggest part of the cookie batter in relation to the other ingredients. It is the flour that seems to help all of the other ingredients relate to one another.

So, what happens when we remove the flour from the recipe?
It would seem that we would need something to act as the 'base' in a cookie recipe. We need something to be what we add the other ingredients to and that can act as what relates the other ingredients to one another. So, I am using oatmeal.

I am a fan of oatmeal.
I add oatmeal to my Greek Yogurt as one of my most favorite breakfast meals. As someone who owns a breakfast-based restaurant, I can tell you that we sell plenty of oatmeal to our patrons. Oatmeal is relatively cheap and it is pretty filling in the belly.

No Flour Added, Chocolate Chip Peanut Butter and Oatmeal Cookies

A delicious chocolate chip, oatmeal, and peanut butter cookie made without flour.

Ingredients

- 1. Peanut Butter- 1 cup (I use smooth)

- 2. Oatmeal- 2 cups

- 3. White Sugar- 1/2 cup (can sub in alternative)

- 4. Bakins Soda- 1 tsp

- 5. Brown Sugar- 1/2 cup

- 6. Eggs- 2 beaten

- 7. Vanilla- 1 teaspoon

- 8. Chocolate Chips- 1 cup

- HOW TO MAKE THIS

- 1.Combine your dry ingredients- oats, flour, sugars and baking soda in a mixing bowl.

- 2. Add your peanut butter to the bowl and mix lightly.

- 3.Mix in your beaten eggs to the batter in the mixing bowl.

- 4. Fold in your chocolate chips.

- 5. Bake for 10-12 minutes at 350. I use parchment paper as a prep to my pans.

  5. I think it would have a better consistency if you ground up 1/2 cup of the oatmeal to make it finer before adding it to the cookie batter.
