Valentines Day 'season', yes season, always reminds me of what folks can do as a couple.
Instead of enjoying something for just myself, I am reminded, thanks to the 'holiday of romance', that two can be more fun than one.

Mug cakes are in a way, genius.

Mug cakes are so easy to make because there is so much less work to do to enjoy them.
Making a mug cake in the microwave saves all of that time that I would normally waste in prepping pans and cleaning pans, let alone waiting the 30 minutes for something to bake.

Don't get me wrong.
I do love cake. I love cake especially when the cake is fresh and I enjoy that first piece.
After that first piece of cake I start to feel guilty about all of those calories that I consumed. Then I look over to the remains of the cake and all the time that I am thinking about how good that cake looks and tastes, I am the last person who really needs those calories.



Mug cakes are so easy to make and so easy to limit my indulgences.

Normally, we would make most anything baked with blueberries into a muffin.
Blueberry muffins are a favorite around here. We take a morning blueberry muffin breakfast very seriously. Only fresh blueberries will do for us.

We all may be asking, what is the difference between a blueberry cake and a blueberry muffin.
They really are close to being the same thing. A blueberry cake will probably have a bit more sugar in it. A blueberry cake is a cake. Cakes are meant to be eaten as a dessert which many folks equate as being sweet.

A muffin is not widely considered to be something sweet.
As a muffin, we expect to eat it with breakfast or with tea as a snack. We don't normally think of muffins as something that we enjoy as dessert.

This is a recipe for blueberry cakes for two.
Two, as in Valentines Day, couples, or two servings. If you are wanting to make this for one, simply cut the recipe in half or find yourself a large mug to make it in.

While on the subject of mugs, you will need to use mug to make this blueberry mug cake in. That mug should be microwave safe. That mug may also get hot so, be prepared to take precautions.

A blueberry cake made in a mug. This recipe is for two cakes or one large cake depending on the size of the mug.

Ingredients

- Butter- 4 tablespoons

- AP Flour- 1/2 cup

- Brown sugar or coconut palm sugar- 5 tablespoons

- Baking powder- 1/2 teaspoon

- Cinnamon- 1/2 teaspoon

- Eggs- 2

- Milk- 2 tablespoons

- Vanilla Extract- 2 teaspoons

- Blueberries- 2 tablespoons

- Optional- sugar for dusting

- ------

- Instructions:

- This works best if made one at a time. Simply split the ingredients in half if using two mugs and alternate cooking in the microwave between the two mugs. 10-12 ounce microwave-safe mugs are recommended.

- Melt the butter in each mug, separately as mentioned. It should take about 30 seconds.

- Add the wet (eggs, mile, vanilla) ingredients to the mug and beat together.

- Then add the dry ingredients (everything remaining except for the blueberries) to the mug and mix.

- Carefully, as to not over-mix, fold in your blueberries.

- Microwave for a minute, each mug alone. If cake seems dry and able to pull away from the mug, it should be finished. If it is not finished, microwave for another 30 seconds, repeating until done. Depending on the wattage of your microwave, it should not take more than two minutes per mug to finish.

- Sprinkle a bit of sugar or alternative on top if desired.
