Slow cookers are such an amazing help when we are heading to a pot luck or planning a party.

When you can make something in a slow cooker, you can really add a lot of convenience to a situation.

I admit that I do not only use my slow cooker to prepare delicious food for crowds. I use my slow cooker as a helpful kitchen appliance. A slow cooker can do the work of cooking something for me when I want to enjoy a yoga class on a Saturday afternoon and then come home to feed hungry people. Slow cookers are so helpful to me when I want to prepare something while my stove is otherwise in use.

There are so many reasons to use a slow cooker that I think most folks would agree, they are nice to have around.


A soup made in a slow cooker is a great idea when you are sharing it with others or simply enjoying it for yourself. I love that I can set the slow cooker to warm and it will keep my soup warm so that someone else can enjoy it. I also love that I can make an easy soup by pretty much adding the ingredients together in my handy slow cooker.

The best part is that you can use a rotisserie chicken, precooked, chicken or even left over chicken to make it.

An easy and delicious soup.

Ingredients

- 1.Chicken Broth- 2 cups

- 2.Cooked Chicken( can be leftover, rotisserie,etc)- 1 lb

- 3.Enchilada Sauce- 1 can 18-20 ounces

- 4.Can of corn- 1 14-16 ounces

- 5. Tomato Sauce or diced tomatoes in a can- 14-16 ounces

- 6. Optional Seasonings- 1 tsp cumin or can add a chopped chili pepper.

- INSTRUCTIONS

- Dice or shred precooked chicken and place into slow cooker.

- Add remaining ingredients and cook on low for 4-6 hours.

- Serve with tortilla chips, and/or your favorite toppings.
