We also like to eat stew that is made from vegetables.

Stew is one of the most popular winter foods around.
I think that it may have something to do with the heartiness of it.

I like that stew is an easy way to get vegetables into what could be a warm winter meal in a bowl.

It seems pretty easy to find a recipe for a basic beef stew.
I think that may be because beef stew has been around forever. Stew has always been an easy way to use what you may have sitting around the kitchen- such as vegetables and left over meat- in a meal that everyone seems to like.

In more recent years, folks seem to have been drawn to a meatless stew.
Using chicken or turkey may be one way to get around using that beef, that makes stew become a meal,while maintaining some hardiness.

Maintaining that stew hardiness can be a challenge when you want to keep any kind of meat, poultry, etc out of it. Without the ingredients such as these,that lend to the hardiness of the stew, the stew can pretty much resemble a soup. One way to get around this is to use eggplant.

I am calling this stew "7 ingredient".
That is because I am trying to promote the simpleness of actually making a stew without meat in it, In reality, many of use enjoy added flavors in our stew. For that reason, I have included the option of additional seasonings. Your optional seasonings can include, salt, pepper, and parsley, for example.

7 Ingredient Vegetarian Stew


An easy way to make a hardy meatless stew.


- Extra Virgin Olive Oil- 1/4 Cup

- Garlic- 2 cloves chopped, 2 cloves peeled

- Onion- 1 large sliced

- Potatoes- 2 large chopped

- Eggplant- 1 chopped (can sub in butternutsquash)

- Can Diced Tomatoes- 1 28 ounce can

- Vegetable Broth- 1 cup

- Optional- seasonings as desired

Optional- sliced peppers and/or carrots



-Use a large pot such as a Dutch Oven.

-On medium heat, start by cooking your onions and garlic for about a minute- for them to get warm.

-Add your chopped potatoes and eggplant, stirring them in the oil to get them covered with the oil.

-Cover and continue to cook for about 10 minutes, stirring occasionally, until the eggplant and potatoes become soft.

-Remove the cover and add your remaining ingredients.

- Reduce the heat to a low medium setting and continue to cook, stirring occasionally, for another 15 minutes.
