I'm one of those people who loves chili but, sometimes wants that chili to be vegetarian.
A vegetarian chili, of course, is a chili without meat in it.

The first time that I had vegetarian chili, I had no idea what it was.

I love a good potluck occasion.
Perhaps, the best potlucks are the ones at tailgate parties before a game. I also enjoy the potlucks at holiday time when everyone seems to up their potluck game and bring something spectacular to share.

I remember the first time that I had a vegetarian chili.
It was at a potluck holiday party at a neighbor's house. The potluck party was very casual and everyone just seemed to place what they were sharing on a table before diving into what everyone else brought to share.

Nothing was labeled at that party which is how I tasted my first vegetarian chili.
I had no idea that what I was eating was a vegetarian chili while I was eating it. Then the cousin of the neighbor throwing the potluck asked me how I enjoyed her vegetarian chili. I was taken back as I thought for sure that I was eating a traditional chili with meat in it.

That is when I learned that the trick to making a successful vegetarian chili is to use enough variety of vegetables and other ingredients to make it taste like the real stuff. You also have to make the recipe using the traditional sauces and tastes as the real stuff has in it.

I love that the vegetarian chili is loaded with vegetables.
Having the vegetables already included kind of makes the chili feel more like a square meal to me. Especially, if I am eating the chili with chips or something else.

What do you top your vegetarian chili with?
I would say that you would top the vegetarian chili with whatever you would top a traditional chili with. That would mean a good cheddar cheese and maybe some chopped green onion and whatever else you like on a chili.

A vegetarian chili, of course, is a chili without meat in it.
  • 2 Tablespoons- Olive Oil
  • 1 large chopped- Onion
  • 2 cloves chopped- Garlic
  • 3- 28 ounce cans with juice- Crushed Tomatoes
  • 1 teaspoon- Ground Cumin
  • 2 tablespoons- Ground Oregano
  • 3 15 ounce cans in total- can mix- Beans (garbanzo, kidney, black)
  • 1 15 ounce can- Canned Corn
  • 2 jalapeno/green, and/or 2 four once cans of green chili. - Optional- peppers (chili, jalapeno,bell)
  • 1 1/2 tablespoons- Optional- Chili Powder
  • as needed- Optional- salt
In a large pot over medium heat, add your oil, onions and garlic. Cook 4-5 minutes or until the onion becomes soft.Add the tomatoes, cumin and oregano to the pot and cook for ten minutes to blend together the flavors.Add your remaining ingredients, turn the heat down to a simmer and continue to cook for another half hour, stirring as you cook. Another option would be to place all ingredients in a slow cooker and cook on low for an hour or until ready.

  1. My verdict is still out on this chili. I do love meat in my chili.

  2. I've eaten many types of vegetarina chili and make multipe versions myself. The most unique Vegetarian chili was made by this woman at my church. She used eggs in place of the meat. I know it sounds odd, but you could fool any meat eater with this chili!
