Is it me or does it seem like we only eat pumpkin pie this time of the year?


I guess that in a way it is a good thing that we only eat pumpkin pie this time of the year because it certainly gives us something to look forward to.

I love that Pumpkin Pie is a staple this time of the year.
We enjoy pumpkin pie as a dessert with friend and family just because pumpkin pie is such a festive fall treat. We also, most importantly if you ask me, enjoy pumpkin pie as part of a holiday dinner. Thanksgiving seems to be synonymous with pumpkin pie- just after turkey of course...



Pumpkin Pie is such a fun and tasty treat this time of the year! Having a classic recipe for pumpkin pie reminds us of family gatherings of long ago.



The kind of pumpkins that we use for baking are actually pretty wholesome.

Okay, we may use the pumpkin that comes from a can, at least I do out of convenience. There is a lot of good about pumpkin.

1 cup of pumpkin that has been cooked and drainer has about 49 calories, 2 grams of protein, 3 grams of fiber and 37 mg of calcium . You probably already know that pumpkins come in various varieties, some good for cooking while others are good for carving.

Foolproof Pumpkin Pie
By foolproof, I mean it's the proven standard recipe that has worked time again for folks.
If you are trying to impress a crowd or show off your 'kitchen' skills, this is a good way to do it.
Ingredients
  • 1 9-inch unbaked pie shell- store bought or homemade
  • 2 Eggs slightly beaten
  • 1 can (16 oz) solid pack pumpkin
  • 1 cup firmly packed brown sugar
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons melted butter
  • 1 cup skim milk
  • 1 teaspoon vanilla extract
Instructions
Preheat oven to 425°F.Prepare your shell crust as indicated.Combine all of your remaining ingredients in a large bowl one at a time, mixing as you go.Pour your mixed batter into your pie shellBake 16 minutes and then Reduce oven temperature to 350°F and continue baking for an additional 45-50 minutes or until knife inserted near the center comes out clean.Serve warm or cooled.
