For some reason, this soup reminds me of a fondue.
The difference between beer cheese soup and fondue would be that beer cheese soup is less heavy and is easy to eat with a spoon. A similar fondue would be served best with chunks of bread that can be dipped into it and then enjoyed.
Beer cheese soup really does resemble a fondue in a lot of ways. I guess that is why I like to enjoy it with a great bread.
What kind of a beer would you use in a soup?

When it comes to a soup that has both beer and cheese in it, I find that it is important that the two work together to complement their tastes. Depending on the cheese that you would use, some kind of an ale beer would be a good choice to use in a soup. I like to balance the cheese and beer so that neither takes over the other when it comes to over-all taste of the soup.

I am using cheddar cheese- both mild and sharp.
I like the flavor of cheddar and I like the way that it works so well in a soup. I combine the mild and sharp cheddar to achieve a taste that falls somewhere in the middle of the two cheddar's.

I am pairing my cheddar with a seasonal ale. I love that there are so many great seasonal beers around this time of the year. The seasonal beers that I have tried from my local liquor store all seem to come from small breweries and have such a wonderful taste. One local store will let you assemble your own six packs with beers of your choice. This is such a great way to taste different beers.

This soup takes a bit of extra effort to make.

There is a lot of effort that goes into making a beer cheese soup. I think that the effort just adds to the soup and the enjoyment in eating it. This soup can easily be eaten as a meal which is another reason why the effort is so worth it.

This beer cheese soup recipe is for a hearty and delicious soup to enjoy this time of the year.
  • 1 Stick- Butter
  • 1/2 Cup- Chopped Carrots
  • 1 Teaspoon- Minced Garlic
  • 1/4 Cup- Chopped Onion
  • 1/3 Cup- Flour (AP)
  • 3 Cups- Chicken Stock
  • 1 12 ounce bottle- Beer- Ale preferred
  • 2 Cups- Milk (whole preferred)
  • 4 Cups- Grated Cheese- Cheddar Preferred, Can Mix Cheeses
  • 2 Teaspoons- Worcester Sauce
  • 1 Teaspoons- Dijon Mustard
  • To Taste- Salt, Pepper, Seasonings
  • As Needed for Toppings Chopped Scallions etc
Over medium heat, add your butter, carrots, garlic and onion to a large stock pot or Dutch oven. Stir together until vegetables are soft- about six minutes.Add the chicken stock, Beer and Milk to the pot. Turn the heat down and simmer for 15 minutes or until thickened, whisking as needed as it cooks.Remove the pot from the heat and stir in your cheese, mustard and seasonings.Return to heat and allow to simmer at a medium-low heat for another 25-30 minutes, stirring as needed, until cheese is fully melted.Tops with scallions etc as desired.
