This fruit topped treat is a favorite!

A healthy and pretty summer dessert that features the wonderful fruit that is in season.

This is called a 'pizza' because it contains a crust, a base, and a topping.

There is not pizza sauce and the is no cheese on this pizza. Although, some cheeses may make a nice accent to the taste and look of this.
Nevertheless, this is a fruit pizza and not a hearty tomato and cheese meal.

What kind of fruit should you use for this pizza?

I go for color first. I also go for what is in season as what is in season is practical. The fruit that is in season will be more abundant, better quality, and a better price. You can use other fruit for accent of taste or color. The main fruit in this should be something that has color and and is in season. This is for the best visual and taste results.

The crust is a basic cookie-like kind of crust.

I am using a sugar free recipe. You are welcome to alter this to a sugar crust. I am on a restricted sugar diet as I am sensitive to sugar. The good news is that the sugar that comes from this fruit pizza is from the fruit and is natural sugar as a result.

The recipe for a fruit pizza

The crust

This is the equivalent to the crust on a regular pizza. This crust is has been altered for a fruit pizza rather than for a tomato sauce pizza. The tomato sauce pizza crust probably would taste a bit bland with fruit on top of it.

Ingredients:
  • All Purpose Flour 1 1/4 cup
  • Butter- 1 stick softened
  • Sugar (confectioners sugar) or sugar alternative 1/2 cup equivalent
  • Vanilla Extract 1 tsp
  • Corn starch- 1 1/2 tablespoons (omit if using confectioners sugar)

To make the crust- combine ingredients above until you are able to form a ball. Press this out into a 10-12" pizza pan. Bake for 12-15 minutes at 350 until hard. Remove from oven and allow to cool.

The base

The base of this pizza is the fruit pizza equivalent of the tomato sauce base on a regular pizza that you might enjoy as a meal.

  • Cream cheese- 1 8 ounce package softened
  • Sugar (confectioners sugar) or sugar alternative 1/2 cup equivalent
  • Corn starch- 1 1/2 tablespoons (omit if using confectioners sugar)

Cream above ingredients together until smooth. Spread over pizza crust

The topping

This is the fruit and other optional ingredients that you put on top.

You will need about 2 cups of fruit in total. This depends on the fruit that you are using. Whole berries look nice as is and strawberries look best sliced. Avoid using bananas as they will turn.

Simply place the fruit in a design according to color or desired design. Serve as soon as possible.
