I must admit that I have never been a huge fan of Brussels Sprouts.

I was never really a fan of Brussels Sprouts and I certainly never thought that I would be sharing a recipe for making them.

What turned my view on Brussels Sprouts?

I always thought that Brussels Sprouts were disgusting and smell bad.

Brussels Sprouts were never a vegetable that we enjoyed when I was growing up. I can think of no meal served in my house that had Brussels sprouts in it. So, of course, I had no reason to be a fan of the vegetable.

Then I met these ladies in my yoga class who would go on and on about Brussels Sprouts.

These women in my yoga class would always be sharing their stories and recipes about the delicious Brussels Sprouts that they made for dinner the night before. I would sit there, not unlike an eight year old, going "Yuck" "gross" after every recipe discussion.

Then one day I read some good news about Brussels Sprouts.

It turns out that Brussels Sprouts are really good for us. Shows what I know right?

First of all, Brussels Sprouts are really low in calories- under 40 for a cup of them.
They are also loaded with Vitamin C. We all need Vitamin C right?
Brussels sprouts also contain folic acid and vitamin B6.

There is also some scientific research that suggests that Brussels Sprouts contain a phytochemical which may have anticancer properties.

So now it was on.
I needed to get on the Brussels Sprouts game.

Luckily, I love garlic.
I figured that if I roast about any vegetable that I am iffy about in garlic, it is bound to taste good. Makes a lot of sense to me..

Garlic Roasted Brussels Sprouts

This is a really simple recipe that is also really good!

What you need to make Garlic Roasted Brussels Sprouts:

  • Brussels Sprouts 1 1/2 pounds fresh if possible
  • Olive Oil- I use extra virgin- 2 tablespoons
  • Garlic- 3 cloves chopped small or minced
  • Salt- 1 teaspoon

How to make Garlic Roasted Brussels Sprouts:

  • Preheat your oven to 375
  • Prep your Brussels Sprouts by cutting off the ends (brown area) and any discolored leaves.
  • Place your Brussels Sprouts in a large bowl.
  • Add your remaining ingredients to the bowl and toss the Brussels Sprouts in them assuring that they are evenly covered.
  • Spread the covered Brussels Sprouts flat in a pan- I usually will spread foil or prep the pan prior to adding the sprouts. Bake for 45-50 minutes, stirring occasionally, until somewhat crispy.

  3. As I read the first few lines of this post, I realized this was me! Then my sister made them for me once by simmering them in chicken broth. Later on, I began roasting them. Yum! But it took me a LONG time to get there. lol
