I grew up by a restaurant that was famous for their apple pancake.
It was called a "German Apple Pancake" to be specific.

That German Apple Pancaked was famous.

People lined up down the street on Sunday mornings just to get one of those!


I always thought that the famous German Apple Pancake apple pancakes were a bit to sweet.

It was smothered in powdered sugar and came with syrup.
That is a bit too much sweetness for me to handle. I can't even imagine the calorie count of that thing!

I love apples and I believe that there is a place for them on the pancake.

I just believe that there doesn't need to be a lot of excessive sugar added to the apple pancake to enjoy it.
Part of the satisfaction of enjoying the apple pancake is enjoying the apple that comes with it. If you can't enjoy the apple, why even put it in there?


This is definitely something that I would make in my cast iron skillet.
I can't imagine using anything else but a cast iron skillet for a baked pancake such as this one.
If you do not have a cast iron skillet, make sure that the one you are using is oven bake safe.
You could probably get away with using a cake pan as well.



I'm using a baking mix for this.

You can make your own baking mix, such as this one that I have shared a recipe for.
Or, where my recipe calls for a baking mix, simply sub in this:
  • 3/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

The recipe


What you will need to make this.

  • 3/4 cup of baking mix such as any basic baking mix or low carb Tova Carbquik Low Carb Bake Mix
  • 4 eggs
  • 1 tablespoon of sugar alternative of your choice. Can use sugar.
  • Milk- 1 cup, can use Greek Yogurt instead
  • Vanilla extract- 1 tsp
  • Butter- 1/3 cup
  • Cinnamon 1/2 tsp
  • Nutmeg 1/2 tsp
  • Ground Ginger 1/2 tsp
  • 2 large apples- tart green taste best but, any variety of your choice will do. I like to use two different kinds.

How to make this.

  • In a large mixing bowl, combine your eggs, milk, vanilla and baking mix. Mix these together and then set aside and allow to sit as you work.
  • Preheat your oven to 400
  • Prepare your apples by coring them, slicing them in half and then into slices 1/3- 1/2" wide.
  • In a small mixing bowl, combine your your sugar alternative, nutmeg, cinnamon, and and ginger. Set aside.
  • Use your skillet to melt your butter. Once melted, line your skillet with 1/2 half of your sliced apples and then pour your sugar alternative mix over this.
  • When the items in your skillet begins to bubble, pour the baking mix with other items in the large mixing bowl over this.
  • Cover the skillet with the remaining apples. You can top the apples with optional chopped nuts or additional sugar alternative or sugar.
  • Bake for 20-25 minutes. Can top with optional powdered sugar before serving.
