What makes a chicken quesadilla good?


Some folks swear by the cheese that goes into the quesadilla.
Others swear by the dipping sauces or salsas that are served with the quesadilla.
I seem to think that having the right mix of everything is what makes the quesadilla work best for me.


The right tortilla counts as well.

First off, the larger the tortilla the more the tortilla can hold.
How much that can be held in a tortilla is important if you have a lot of delicious food to hold in it. Right?

What kind of a tortilla are you using?

The flour tortilla seems to be the most popular tortilla to use. However, we like to use a lower-carb whole wheat tortilla when we make these quesadillas. The fresher the tortilla the better as well as being fresh sure makes the tortilla easier to work with. Steaming or heating the tortilla in a microwave can help make it easier to work with as well.

And about the chicken...

For the easiest way to make a chicken quesadilla, anything precooked is very helpful. You can use a bag or pre-cooked chicken strips, chicken nuggets with flavorings that you cut up, or even last night's left-over chicken. Sometimes, we even make this without the chicken.


The cheese...

Ask five people what kind of cheese works best for any quesadilla and you will probably get at least 10 answers.
True story.
I like to use more than one kind of cheese sometimes to mix up the flavors.
The kind of cheese that you use really has to do with the theme of your meal. A more Mexican theme can use a Colby- jack or cheddar cheese. An Italian theme can go mozzarella. A high-end theme can use a Gruyere cheese or Gouda.
I've used them all at one time or another and they all do a good job.


Dip ideas

Are you dipping your quesadilla? Try these ideas:

  • Homemade salsa using chopped cilantro, Roma tomatoes, and onions.
  • Blue cheese, Ranch, or homemade dressing.
  • Sour cream.
  • Barbeque sauce
  • Hot sauce
  • Pizza sauce


How to make the chicken and cheese Chicken Quesadilla


Four servings.
You will need:
  • 8 flour, or other, tortillas- 10 inch and soft work best
  • 4-6 ounces of cooked chicken in strips or chunks (see above)
  • 1 cup shredded cheese- see above.
  • Olive oil or butter or spread of your choice
  • Seasonings and veggies of your choice (optional)

How to make it:
  • Butter or oil one side of each tortilla and preheat your pan if using one. You can also use a grill, oven, microwave or toaster oven.
  • To assemble these, place each tortilla down on your heated surface.
  • Sprinkle about a tablespoon of cheese on the top of the tortilla then about 2-3 ounces of chicken and any added veggies. Follow with a half tablespoon of cheese and then another tortilla with the prepared side up. Season the top side of the tortilla as desired.
  • When the cheese begins to melt, holding everything in place, flip your quesadilla over and season the top.
  • When browned, remove from heat, cut, and serve.


Tip: you can make a lot of these at one time in the oven. These also make a great appetizer when made outside or inside on a grill.
