I love seeing all of the strawberries popping up in the grocery stores this time of the year.

Strawberries are a fruit that comes with it's own natural sugar and also tastes yummy.

There are so many great things that we can do with strawberries.



I've already shared Sugar Free Strawberry Jelly and  An Easy Strawberry Vinaigrette Salad.

These were both great recipes that I enjoy making regularly. But, what about something that has no added sugar in it that can be eaten for dessert?



Thank goodness for a strawberry pie!

For this recipe you will need a pie crust.

you can use a premade one of your choice or use my recipe for a low carb pie crust and make one yourself.

I use a 9" glass pie pan.
Your pie crust should be made for the size of the pan that you are using.

You will also need cornstarch.

Cornstarch is sugar free thankfully. It is not carb free though. Some folks will use flour as a substitute for flour. I have not testing this so I cannot tell you how well flour will work for cornstarch.

Lastly, for best results, I use fresh strawberries.

If you cannot find the fresh strawberries, use the frozen kind. Be sure that your frozen strawberries are not packaged in a sugary liquid as this will not only add sugar to your pie, it will change the recipe consistency.

Sugar Free Strawberry Pie
An easy to make pie with no added sugar.
Ingredients
  • ~ Store bought or homemade for a 9" pie - Pie Crust
  • ~1 quart - Fresh Strawberries, divided
  • ~1 cup - Sugar or Sugar alternative for sugar free version
  • ~ 3 tablespoons - Cornstarch
  • ~ 1 teaspoon -Vanilla Extract
  • ~ 1/2 Cup - Water
  • ~ 8-10 split -Optional Additional Strawberries for Topping
Instructions
Prepare your pie crust as directed. Allow to cool before making this pie. Be sure to use a glass 9" pie pan for this recipe for best results.Gently crush 1/2 quart of your strawberries and set aside. Place the remaining 1/2 quart arranged in your pie crustIn a small bowl, whisk together your water, vanilla, and cornstarch.Combine your crushed strawberries with your water mixture in a sauce pan and bring to a boil, stirring as you go. Reduce to medium heat and cook this, stirring as you go, until it thickens. This process can take up to 30 minutes.Pour the thickened sauce over the strawberries that are in the pie crust. Refrigerate until set- about 3 hours.Top with optional strawberries and other toppings of choice (whipped cream) before serving.
