I don't know if is the smell of fresh bread that I like better or the smell of cinnamon raisin bread.

No Sugar Added Cinnamon Raisin Bread


The only way to fully go sugar free when it comes to a cinnamon raisin bread would be to omit the raisins.

Raisins, as you know, have that natural sugar that makes them so sweet. Because of the small size of a raisin, the sugar only seems to hit us in small doses. If you do not want any sugar, omit the raisins from the recipe. If you want only a small amount of sugar, you can cut the amount of raisins that your add to the recipe.

Cinnamon comes with and without sugar.

Sticking to a ground cinnamon that has no sugar is the way to go if you want to avoid any added sugar. Simply Organic Cinnamon Ground Certified Organic, 2.45-Ounce Container


This is a quick bread recipe.

There is no need to add yeast.
Instead, I am using a baking mix that is low carb. You can use any similar baking mix as well.
Carbquik Baking Mix



I use Carbquik for a good majority of my baking. I find that it is easy to use in many of the food that I bake on a regular basis.

Note that this recipe can be low carb if you omit the raisins and use Carbquik.

No Sugar Added Cinnamon Raisin Bread
Enjoy a cinnamon bread without the added sugar. This recipe can be made for a low carb person as well if you use the low carb baking mix and omit the raisins in it.
Ingredients
  • 1/3 cup Sugar Alternative such as Splenda
  • 2 teaspoons Ground Cinnamon
  • 2 cups Baking Mix, such as Carbquik
  • 1 cup equivelent Sugar Alternative
  • 2 beaten Eggs
  • 1 cup Milk, Sour Cream or Greek Yogurt
  • 1/3 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 1/3 cup Raisins- optional
Instructions
Preheat your oven to 350. Prep a loaf pan for nonstick- I use softened shortening.In a small bowl, whisk together your cinnamon and your 1/3 cup of sugar alternative. Set this aside.In a mixing bowl, mix together your remaining sugar alternative and baking mix. Add your eggs one at a time, stirring between additions.Add your oil, vanilla, and milk and continue to mix. Finally , gently stir in your optional raisins.Pour half of the batter into your baking dish.Sprinkle the cinnamon/sugar alternative mix from your first bowl over the batter. Then, pour the remaining batter over the cinnamon/sugar layer.To make a 'swirl' or 'marble' simply use a knife to draw one in by dragging the knife through the batter a few times..Bake for 50-50 minutes or until your toothpick comes out clean. Allow to cool for about 12 minutes before slicing.
