Biscotti is so delicious. I love that Biscotti can be relatively easy to make as well.

Biscotti is extra enjoyable when enjoyed with a favorite beverage.
I think that is because Biscotti is rather dry. In comparison to other cookies, Biscotti is a less moist option.
Being less moist than the others makes Biscotti a more enjoyable choice for dunking.

If you want to impress your mother, grandmother or simple add some dimension to a plate of cookies, Biscotti is an impressive way to go.

This recipe is a basic Biscotti recipe. It is an easy cookie to prepare and an easy cookie to enjoy.

EASY Sugar Free Almond Biscotti
An easy way to make a favorite that is also sugar free
  • 1 stick softened Butter (unsalted)
  • 1 cup equivalent Sugar alternative
  • 3 Eggs
  • 1 cup chopped, preferably toasted Almonds
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 3 cups Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
Preheat your oven to 350, can be done while dough sets.In a large mixing bowl, stir together your butter and sugar alternative until creamy.In a smaller bowl, whisk together your flour, salt, and baking powder.Add your eggs and extracts to your large mixing bowl and mix with your butter and alternative.Now, slowly add your flour mixture to the mixing bowl a bit at a time, mixing as you add. Then stir in your almonds by hand.On a floured surface, roll out half of your mix into a log or loaf shape and then roll out the remaining mix into another log or loaf shape. Allow this to sit for about 20 minutes unbothered.Using a serrated knife, slice your biscotti into 1/2-3/4" slices (by width) and place each individual cookie, cut side down, on to an baking sheet. Bake for 20-25 minutes or until golden.
