You can also enjoy your vegetables and your bread.

This recipe is as easy as you want to make it. It is just a matter of where you want to use pre-made ingredients. The pre-made ingredients can save you some time.

Chicken Pot Pie is one of those meals that I will make in advance and pop into the oven when I am ready to bake it.

It always turns out good. Every time that I serve it, I get many complements. People are really impressed that my homemade chicken pot pie really is homemade. Homemade chicken pot pie really is an impressive meal.

What vegetables should you add to chicken pot pie?
The vegetables that you add are really a very personal thing.
Most people expect to find carrots and peas in their chicken pot pie.
There are other vegetables that you can add including celery, chopped potatoes and/or broccoli.

The hack for the vegetables would be to use a bag of mixed vegetables that are all ready to go.

You will also need a pie crust.
You can make your pie crust from scratch.
If you don't have time to make your own pie crust, you can certainly use a hack- a store bought pie crust.
A compromise for a pie crust would be to use a baking mix.

Obviously, chicken pot pie calls for some kind of a creamy sauce.

You can make your own sauce or use a can of soup to make it a bit easier for you.

The recipe for Easy Homemade Chicken Pot Pie


  • 1 pre-made pie crust + 1 for topping. If you don't want to use a premade crust, you can make your own using your recipe, a baking mix or try this low carb homemade pie crust.
  • Chicken- 2 1/2 cups precooked and in chunks (can use precooked strips that are cut up)
  • Sauce- 1 can of condensed soup or make your own (using 1 1/3 cup of broth+ 1/3 cup of flour+ 1/3 cup of butter +seasonings such as salt and pepper cooked over a medium heat until thickened, stirring as you go.)
  • Cubed vegetables of your choice- see above for ideas- 2 cups
  • 1/2 cup of milk (add milk if using condensed soup- skip this if you are making your own sauce)
  • Seasonings as desired.

How to make it:

  • Preheat your oven to 425. Prepare your crusts as directed and place in a 9" (glass) pie pan.
  • In a medium bowl, stir together your soup, milk and seasonings. Set aside. If making your own, prepare as directed and set aside.
  • Place your chicken in the pie crust- evenly dispersed. Then add your vegetables to your chicken making sure that everything is dispersed evenly.
  • Pour your soup mix over the vegetables and chicken. Cover with your remaining crust, sealing the edges and making a few slits in the top.
  • Bake for 30 minutes then loosely cover the edges with aluminum foil and continue to bake for another 10 minutes. If the edges are not turning brown, you can skip this step. Bake for a total of 40-45 minutes, remove from the oven and allow to sit before serving.
