Tomato and Mozzarella Salad in Sugar Free Balsamic Dressing

Like most people, I grew up thinking that mozzarella cheese was that grated white cheese that went on top of a pizza.
It wasn't until I was on a ethnic food tasting tour in New York City that I learned how to appreciate Mozzarella cheese.

If you have never experienced fresh mozzarella, in a 'ball' form rather than in a shredded form, I urge to to try this tasty experience. It's almost a different mozzarella than the cheese you would probably see in your average grocery refrigerator.


Tomato and Mozzarella Salad in Sugar Free Balsamic Dressing


There is something special that happens when fresh mozzarella meets the right tomato. My choice of tomato is the plum or Roma tomato. I enjoy the rich tomato taste of the Roma tomato when it meets the deep cheesy taste of mozzarella.
You can also use a cherry tomato or heirloom tomato in this recipe.

Basil is the essential herb that is used in just about every kind of mozzarella-tomato marriage.
If you are serving your mozzarella and tomatoes as slices, you can get away with chopped basil or even basil that has been dried that is sprinkled over the food. However, in a salad, the basil should be in a fresh leaf form as this is part of the great overall taste of the salad.

For the Balsamic Dressing, all you need is a simple mix.

You will need balsamic vinegar and olive oil. A sugar substitute such as Coconut Palm Sugar or Splenda is needed as well.

Ingredients
  • 4-6 Roma or 1 pint cherry Roma or Cherry Tomatoes
  • Small balls or chunks 1 lb Mozzarella -fresh as possible
  • 1 1/2 cup (can sub in other dark leaf if desired) Basil leaves
  • 1/4 cup Balsamic Vinegar
  • 2 tsp Coconut Palm sugar
  • 1 clove minced Garlic
  • optional seasonings to taste Salt and Pepper
Instructions
In an empty jar combine together your vinegar, coconut palm sugar, garlic and seasonings . Whisk well and set aside.Place your tomatoes in a shallow bowl, add your tomatoes and then place your basil leaves within them. Sprinkle your dressing over the mixed tomatoes and cheese. If desired, sprinkle additional seasoning over this for taste.

  1. I love salads a lot. I like putting different veggies or things in them. I am a big fan of fresh tomatoes and cheese and balsamic dressing is my favorite one beside french. thanks for the sugar free recipe.
