There are so many ways to make bran muffins.
I like that there are so many options as it leaves room for experimentation. I like to experiment with my recipes.

Simple Sugar Free Bran Muffins




Some bran muffins have a lot of sugar added.
Obviously, my muffins don't have a lot of added sugar. I like to stick to added sugar that comes from ingredients themselves.


Bran muffins are the perfect make before-hand breakfast item.


I will make bran muffins when I need to bring something to a brunch or when I know that I will be having company over and that I will have little time to make muffins before they get there that day.

Bran muffins require wheat bran.

Wheat bran is something that most of us don't have on hand in their kitchen cabinet.


I like that Wheat Bran is said to be an excellent source of natural food fiber.
Wheat bran provides a full-bodied texture to baked items. You can also sprinkle it over soups and salads.

I am also use Coconut Palm Sugar.
Coconut Palm Sugar is what I use when I want to sub in for brown sugar. You can use the same measurement of coconut palm sugar as you would use of brown sugar.


If you do not want to use coconut palm sugar, you can always opt for something like
Splenda.

Simple Sugar Free Bran Muffins
I will make bran muffins when I need to bring something to a brunch or when I know that I will be having company over and that I will have little time to make muffins before they get there that day.
Ingredients
  • 1 1/2 cups Wheat Bran
  • 1/2 cup Greek Yogurt
  • 1 stick softened Butter
  • 1/3 cup Vegetable Oil
  • 1 cup Egg
  • 1 cup Coconut Palm Sugar
  • 1 cup Flour- AP
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract
Instructions
Preheat your oven to 350 and prep your muffin pan for non-stickIn a medium bowl, whisk together your bran, flour, baking soda, baking powder and salt. Set asideIn a mixing bowl, mix together your yogurt and butter. Add your oil, egg, vanilla and sugar and continue to mix.Slowly add your first bowl of dry ingredients to the mixing bowl, stirring as you go.Stir until all is mixed, trying not to over mix.Bake for 18-20 minutes. Allow to cool.

  3. We have an old family recipe for bran muffins - it is by far not sugar free nor remotely low in calories - but they are the tastiest bran muffins ever!
