Take a basic recipe and add a bit of coconut to the presentation and you have added a bit of texture and taste to that presentation.

Coconut by nature comes with it's own sugar. Even though this recipe doesn't call for a whole lot of coconut, it is still not fully sugar free. This recipe is simply lower in sugar than the full-sugar coconut ball recipe.

Surprisingly, to some, there are some benefits to coconut.

Coconuts are high in potassium, iron and fiber.
Coconuts may be high in flavor but, they are still not low calorie. I tend to use my shredded coconut in moderation and as an accent to something else.

You will need some shredded coconut for this recipe.

I found some shredded coconut on Amazon.

No Sugar Added Coconut Balls
A lower sugar alternative to a tasty favorite
  • 1 cup/2 sticks softened Butter
  • 1/4 cup Splenda
  • 2 tsp Cornstarch
  • 1/2 tsp Salt (omit if using salted butter)
  • 1 tsp Vanilla Extract
  • 2 cups Shredded Coconut
  • 2 cups Flour- AP
Preheat your oven to 350 and prep your pans for nonstick .I use parchment paper.In a mixing bowl, cream together your butter, Splenda and cornstarch.Add your vanilla, flour and salt and continue to mix.Using a baking sheet lined with parchment paper, or similar set-up, distribute evenly your shredded coconut.Roll your dough into 1-1 1/2" size balls, then individually roll each ball around in the coconut to cover each ball with coconut.Place each individual ball on your baking sheet about 2" apart. Bake for 18-20 minutes. Allow to cool.
