I have been really into the breakfast thing lately.


I don't know if it is because of the cold weather or if it is because I have not had pancakes in a long time.

Sugar Free Cinnamon Wheat Pancakes

Pancakes seem to bring back a childhood memory for a lot of us.
There are a lot of fond memories for me sitting around the kitchen table, with a full family there with me, and my mom dishing out some great looking pancakes. The smell of fresh pancakes is something that seems to stick with us too.

Pancakes are great because you can add fruit to them or a variety of other goodies that will make them taste even better. I like to top my pancakes with whipped cream. Whipped cream is my vice.

Experimenting with cinnamon and wheat in pancakes is a delicious route to go.

You will need to make this recipe:


Wheat flour



Coconut Palm Sugar


Cinnamon without sugar added

Sugar Free Cinnamon Wheat Pancakes
A tasty way to enjoy your pancakes
Ingredients
  • 2 Cups Whole Wheat Flour
  • 2 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1 1/2 cups- may need up to an extra 1/2 cup to reach desired thickness. Also, can blend both together Milk of Greek Yogurt
  • 2 Eggs
  • 1 tablespoon Coconut Palm Sugar
  • 2 Tsp Ground Cinnamon
Instructions
Preheat your prepped skillet/griddle on a low to medium settingIn a bowl, whisk together your cinnamon, coconut palm sugar, salt, baking soda,and flour. Set aside.In a large bowl, beat together your eggs and milk/yogurt.Stir your dry ingredients into your large bowl of wet ingredients until it becomes moist- avoiding over-mixing.You can use a tablespoon of butter melted on your cooking griddle or a vegetable spray as prep. If using a spray, apply it before you place the griddle on the stove. If using a butter, place it in the preheating skillet when you are ready to start cooking your pancakes. Allow the butter to bubble and then calm before making your pancakes.When each pancake top begins to bubble, flip it over and cook the other side.
