Easy Carrot Soup


I had never heard of carrot soup until someone made some for me a few weeks ago.
It's cold around here and soup is always a good idea for me. Because we enjoy a lot of soup, finding a variety of soups to try is essential.

Why shouldn't we enjoy carrots more?
1 medium carrot is said to have nearly double the daily required Vitamin A in it. Carrots are also said to have some anti-oxidant properties.

Carrots do contain sugar naturally.
The average carrot has about 2.9 grams of sugar.
This is the only added sugar to this soup.

I usually have baby carrots around.
We love to snack on carrots. I also use them for baking cakes and muffins. I'm not the only one who enjoys carrots in my house. My dogs love getting carrots for treats.

What you will need for this recipe

You will need some ginger for this recipe.

Using ground ginger is fine. I use what is in my spice cabinet.

I use chicken bullion.
Using broth or low sodium chicken soup is fine as well. A can(s) of chicken broth can be subbed in as long as you have six cups of it.

You will need some kind of a blender.
Here are some ideas. I use a Vitamix and/or immersion blender.

Easy Carrot Soup
A tasty carrot soup with no added sugar.
  • 1 tablespoon Butter
  • 1 tablespoon Extra virgin olive oil
  • 1 medium chopped Onion
  • 1 stalk chopped Celery
  • 2 cloves chopped small Garlic
  • 5 cups chopped Carrots
  • 6 Chicken bullion cubes
  • 6 cups Water
  • 1/2 cup Greek Yogurt
  • 1 tablespoon Ginger
  • to taste Salt and pepper
  • as desired Garnish- parsley
  • 1 tablespoon or as needed Sugar alternative
In a large pot or Dutch oven, saute together your butter, oil and onions for two minutes.Add your garlic and celery and stir as needed. Cook until the celery has softened and then add 1 cup of carrots and continue to cook for another 3-4 minute for the carrots to soften, stirring as needed.Add your water and bullion and bring your soup to a boil. Simmer for about 30 minutes, allowing all of your carrots to soften.Remove from heat. Allow to cool a bit. Using an immersion blender puree the soup until you reach your desired consistency. It is suggested that you somewhat cover the soup with a towel for example, while you blend to avoid splattering.If using a regular blender, blend your soup in batches.Return the soup to the pot, add your remaining ingredients and cook on a low setting for another 5 minutes, or until your soup looks ready to you, stirring as needed.You can garnish with parsley or croutons when you serve this if desired.
