A while ago I brought home an eggplant from the store.

I have always thought that eggplants are a bit intimidating looking. I mean, they are so big and look like they would be difficult to put into a recipe.

The truth is that eggplants are not just beautiful in color, they are not so tough to work with.

I have always thought that eggplants are a bit intimidating looking. I mean, they are so big and look like they would be difficult to put into a recipe.

Ingredients
  • 1, sliced 1/3-1/2" wide Eggplant
  • as needed Olive Oil
  • 1/3 cup Chopped onion
  • 3 cloves Chopped Garlic
  • 1 cup Crushed Tomatoes
  • 1 tsp Red Wine Vinegar
  • as needed Seasonings- your choice- Italian, Oregano, Black Pepper,,and/or basil
  • 1/3 cup Parmesan Cheese
  • 1/2 cup Mozzarella cheese
Instructions
Preheat your oven to 450, prep a shallow baking pan pan for nonstick.In a large sauce pan, saute your olive oil, garlic and onion for 5-8 minutes for the onion starts to change colorTake each slice of eggplant, individually, and drag it through the sauteed items, covering both sides, and then place the eggplant slices in your baking dish in a single layerAdd your crushed tomatoes, vinegar and seasonings to the sauce pan with the oil and allow to simmer, stirring as needed. Meanwhile, place your baking pan with the egglant into the oven and allow to bake for 8 minutes, flip each slice over, bake for another 8 minutes.Remove the eggplant from the oven, reduce the heat to 350. Cover the eggplant with the sauce that you have been cooking. Sprinkle your cheese over this. Bake for 45-50 minutes or until bubbles appear

    not really much difference in the two . Its good
