Sugar Free Shortbread


I made this sheet of shortbread with the intention of using the shortbread later on a the basis for a pie crust.
If I were not intending on using this as a pie crust, I would have made cookies out of this rather than as a sheet.
Either way, I am a sucker for buttery tasting shortbread, alone or as a pie.

uuuuggghh... or is it ahhhhhh :)

Sugar Free Shortbread

This is such a classic recipe and it is so basic. So, why not make it sugar free?

Here is what I used for this

Splenda Granulated Sweetener

Baking sheet (half)

The Recipe

Sugar Free Shortbread
Enjoy this classic delicious shortbread without all of the sugar
  • 2 sticks room temp Butter
  • 2 cups Flour
  • 1 tsp Vanilla Extract
  • 1 cup Splenda or similar alternative
Preheat your oven to 325. I use a parchment paper or will use oleo to protect from stickingIn a medium bowl bowl, whisk together your flour and Splenda . Stir in your vanilla.Use a cutter or two forks to cut your butter into the bowl of dry ingredients. Continue to mix by hand and then then as kneading.Press the shortbread mix into your pan. Bake for 25-30 minutes or until browning begins. Note- cookies may not need this amount of time to bake- 15-20 minutes.This dough can be refrigerated for later use as well.

  1. This is a great idea. There is already so much sugar in recipes, that to have a sugar free shortbread on the bottom would be perfect.

  2. One of my friends favorite cookie is the shortbread one. Being that shes diabetic also this would be nice to make for her . thanks

  3. My husband loves loves shortbread. I will have to attempt to make some for him. I have tried in the past but did not have good luck with it. This looks not too hard for me.
