Sugar Free Pumpkin Muffins


Have you noticed that there is a pumpkin flavor for about anything lately?
I know it's definitely the season when I see mixes for pumpkin muffins, pumpkin bread, and pumpkin cookies.

So, I thought, is there are sugar free pumpkin muffin out there?

Sugar Free Pumpkin Muffins

I will make this with as little added sugar as possible to keep it sugar free.

Here is what you will need for this

Pumpkin puree is the way to do this. Make sure that you are using pumpkin puree as this should have no added sugar.

I also like to use silicone cups the are also reusable.

Sugar Free Pumpkin Muffins
Enjoy your pumpkin muffin without all of the sugar added to them.
  • 3 Cups All purpose flour
  • 2 tablespoons Pumpkin Pie Spice
  • 2 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 large Egg
  • 2 cups Sugar alternative
  • 1 can Pumpkin puree
  • 1 tablespoon Vegetable or Canola Oil
  • 1/2 cup Water or unsweetened apple sauce
Preheat your oven to 350 and prep your pansIn a medium sized bowl, whisk together your flour,salt, sugar alternative, spice, and baking soda. Set asideIn a mixing bowl, combine together your eggs, oil and water/apple sauce. Add your puree and continue to mix. Slowly add your dry ingredients to the mixing bowl, stirring as you go.Fill each muffin 1/2-3/4 full. Sprinkle additional sugar alternative on the top as desired.Bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool on rack.

  1. I am loving the pumpkin in everything phase and I hope it stays forever lol!! I looove pumpkin!! Except Pumpkin spice lattes.... Im so not a good typical white girl lol!!

  2. I make pumpkin pies and bread and cookies , and muffins to. I like to put walnuts or raisins in mine. Good to make for my diabetic son. thanks
