Sugar Free Cashew Cookies


I love the taste of a good almond cookie. One day I thought to myself that a cashew cookie would be good too.

Sugar Free Cashew Cookies

The trick to making cashew cookies is to make your own cashew butter. Think of this like a peanut butter but, with cashews.
Of course, my cookies have no added sugar.

Sugar Free Cashew Cookies
The cashew answer to peanut butter cookies.
  • 2 cups Cashews
  • 2 Tablespoons Vegetable or Canola Oil
  • 1 1/4 cups All Purpose Flour
  • 1/2 Teaspoon Salt
  • 1 stick softened Butter
  • 1 cup equivalent Sugar Alternative such as Splenda
  • 1 Egg
  • 1 tsp Vanilla or Almond Extract
  • As desired Options- sprinkle sugar alternative and/or cashews on top
Using a food blender or capable blender, blend together your cashews and oilPreheat your oven to 350 and prep your pans for nonstickIn a large mixing bowl, combine your sugar alternative, salt and flour.Add your butter, egg, extract, and processed cashews to the mixing bowl and mix together until well blended- about 2 1/2 minutes on medium.This is a good mix to allow to set in a refrigerator. You can also bake now for 12-15 minutes or until slightly browned.
