How I used up my leftovers- Linguine with Vegetables

We had a fabulous linguine dinner the other night.

I always make extra pasta because there is so much that you can do with the leftovers. I could, but, probably shouldn't, eat leftover pasta every night.

I had just come home from a productive grocery shopping when I decided to make the most of what I had on hand and makes some space.

Linguine with Vegetable
I've made this with leftover linguine that I had on hand. The vegetables can be altered to what you have on hand as well.
Ingredients
  • 1 box, cooked, buttered and cooled Linguine
  • 2 tablespoons Butter or alternative
  • 1 clove chopped or minced Garlic
  • 1 medium Sliced thin Onion
  • 2 cups Sliced Mushrooms
  • 1/2 cup chopped Peppers- I used red, this can be optional
  • as desired, optional Seasonings
  • as desired Optional items- leftovers meat, chicken, etc.
Instructions
In a medium to large pan, melt your butter over medium heat.Add your garlic and cook for 2 minutes, stirring after one minute.Add your onions and cook for another 4 minutes, stirring at about every minute.Add your mushrooms, stir and cook for another 3 minutes.Add your remaining ingredients and mix well. If needed, add additional butter a teaspoon at a time.Cook for another 5-6 minutes, stirring at about every minute to blend. When mushrooms appear to be browned, remove from heat and enjoy.

  2. I might try something like this today. My Mom had heavy duty dental work this week & needs fairly soft dishes...so pasta it is, lol.
