Foolproof Pumpkin Pie

Foolproof Pumpkin Pie

If you are trying to impress a crowd or show off your 'kitchen' skills, this is a good way to do it.
Ingredients
  • 1 9-inch unbaked pie shell- store bought or homemade
  • 2 Eggs slightly beaten
  • 1 can (16 oz) solid pack pumpkin
  • 1 cup firmly packed brown sugar
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons melted butter
  • 1 cup skim milk
  • 1 teaspoon vanilla extract
Instructions
Preheat oven to 425°F.Prepare your shell crust as indicated.Combine all of your remaining ingredients in a large bowl one at a time, mixing as you go.Pour your mixed batter into your pie shellBake 16 minutes and then Reduce oven temperature to 350°F and continue baking for an additional 45-50 minutes or until knife inserted near the center comes out clean.Serve warm or cooled.

  1. I recently saw a news story about the current pumpkin crop. Apparently floods in IL during the Summer wiped out a lot of it & they are afraid Halloween will leave a real shortage. So, if you want pumpkin pie for Thanksgiving or Christmas, buy the cans of pumpkin NOW!!

  12. I could certainly use a foolproof pumpkin recipe-it always seems to get the best of me! It never fails-I always see to end up with a burnt crust, a soggy middle, or both! For too long, I gave up and resorted to buying the ready-made, store-bakery-bought version. This time, I know I'll get it right.
