It was bound to happen any day to be honest with you.

We had our first frost warning of the season mentioned in the weather forecast. I scurried out to may garden to save what I had left of my bounty. There were surprisingly a lot of Roma Tomatoes and a few funny looking but tasty cucumbers waiting for me.

To make a long story short, I have an abundance of delicious Roma tomatoes to use up. And since I love dried tomatoes in my salad, I thought that I would dry some out in my dehydrator.

I'm using the term 'Sun Dried' loosely as I used my dehydrator to do this. You can use an oven or even the sun to get the job down.

Ingredients
  • 2 pounds Roma Tomatoes
  • As needed Oregano
  • As needed Salt
  • As needed Optional: thyme
  • As needed Optional:dried basil
  • As needed Optional:garlic salt, onion salt,ground pepper
  • your preferred method Nonstick
Instructions
Using firm tomatoes are essential for this recipe. I had some green tomatoes that actually tasted pretty good dried.Cut off any stems, ends or bruisesDecide if you want you tomatoes to be cut lengthwise or horizontal. Lengthwise are great for snacking on while horizontal is great for garnishing with. Cut your tomato in half down the middle depending on your preference of length or width. For a width preference, you will get 3-4 slices while for a length cut you will get 2.Scoop out any seeds and runny juice.In a small bowl or empty shaker, combine any spices that you will be using. I used a pre-combined mix that comes in a shaker like the ones on a store shelf labeled "Italian Spices".Pre-treat your baking sheet or rack using your desired method. I spray my dehydrator racks lightly with common nonstick to make the clean-up easier.Place your tomatoes on the rack/sheet with the cut side up and then season with your desired seasonings. Tomatoes should not touch on another.Food Dehydrator: Set at about 140 degrees if possible. This should take 6-9 hours to complete. I will set mine over night and enjoy the aroma. The thicker the slices, the longer it could take to complete.Oven method- Allow to sit for 15 minutes are you preheat your oven to 250. Bake for 2 hours, turn your tomatoes over and bake for an additional 2 hours or until finished.Got warm dry weather? You can dry these outside. It will take a few days to dry. Cover with cheesecloth and remember to flip these over about half way through.

  1. My Grandma used to dry her sliced apples in the sun (between screens, for some reason?) I remember them laid out on the back porch, then they were bagged & put in the freezer until Christmas, when they went in her apple stack cake.
