Broccoli, Bacon and Grilled Cheese Sandwiches.


I must admit, I love cooking for my son.

That's because he loves my cooking and will eat about every kitchen experiment that I come up with. He is even nice about it when something doesn't turn out perfect.
The other day, when we got a first taste of Fall weather, we got into a sandwich kind of a way. It just felt like a warm grilled cheese sandwich was the right way to go.

I made this sandwich using a low-carb bread. I also used bacon bits- from the bag- in his sandwich.  While we both like American cheese, we thought that we would experiment with something else.

This sandwich really came out good!

Broccoli, Bacon and Grilled Cheese Sandwiches.
A delicious way to enjoy an old favorite. I used low-carb bread, cheddar cheese, bacon, and grated Edam.
  • 6 slices Bread- I am using low-carb
  • Enough to spread+1 tablespoon Butter
  • 3/4 Cup Grated Cheese- I used Edam
  • 3-6 slices Sliced Cheese- I've used Cheddar
  • 3/4 cup- 1 cup chopped Broccoli
  • 6 Tablespoons Bacon
  • To taste Seasonings
Grate your cheese and cook your broccoli if not done as of yet.Preheat your skillet on med-high with your 1 tablespoon of butter on it.While your skillet is heating, spread butter on one side of each bread.Add your optional seasonings to each buttered side.Once your butter has melted, place three of your slices of bread, butter side down, on the warm skillet.Now add your grated cheese, broccoli, bacon and then sliced cheese.Cover with your remaining sliced bread with the buttered side up.When the bottom of your sandwich starts to turn brown and your cheese looks like it is melting, flip your sandwich over.Cook until your bottom slice is brown to your liking and the cheese has melted into a nice blend with the broccoli and bacon.Enjoy !

  1. I love broccoli (& definitely love bacon & cheese!) but I don't know if I would like it on grilled cheese. Hmm, I'll try it.

  2. Grilled Cheese was the star of every lunch I had as a kid, lol. Usually, it was with tomato soup. I still go back to that for comfort food.
