I've been seeing a lot of squash at the grocery stores lately.


I guess that means that it is time for some squash soup.

This soup is a classic for fall. It is also a favorite for Thanksgiving in celebration of the harvest.

Apple-Butternut Squash Soup
I've been seeing a lot of squash at the grocery stores lately.


I guess that means that it is time for some squash soup.
Ingredients
  • 1 tablespoon Butter
  • 1/2 cup or 1 medium Onion Diced
  • 1 Butternut Squash-seeded, peeled and,chopped
  • 4 Golden Delicious Apples- peeled, cored and chopped
  • 4 cups total Clear chicken soup stock- can combine with water
  • 1 teaspoon Cumin
  • 1/2 teaspoon Ginger
  • 1/2 teaspoon Coriander
  • to taste Salt and pepper
Instructions
In a large saucepan or stockpot over medium heat, melt your butter.Stir in your onion with your butter and continue to cook for 3 more minutes.Add your squash, stirring until softened- about 9 minutes.Add your remaining ingredients and bring to a boil.One it boils, turn the heat down and simmer for 30 minutes.Using a blender or food processor to puree your soup. You may need to puree one half at a time.Return to the pan/pot and warm until ready to serve. This is a great time to add any needed seasonings. Some people will add a bit of apple cider to enhance the apple taste. Do this according to your desired consistency of the soup.

I love that this can be personalized with the additional optional apple cider or a leaf of your favorite herb.
